THE PANAMA POSSE PEPPER SCALE

Ancient indigenous people of central Mexico, discovered that peppers could be preserved with the aid of smoke. 

Below are the most common 12 peppers found in markets in central America in order of heat using the *Scoville heat index.

With the lowest heat on the list, Anaheim peppers are about as family friendly as a hot pepper gets and very versatile. With a slightly sweet flavor, they are delicious chopped fresh in salsas and their thick walls and large cavity make Anaheim peppers perfect for stuffed pepper recipes. They make an excellent bell pepper substitute for when you want just a little bit more.

Speaking of alternatives to the bell, the poblano is probably the most popular of them all. It’s mild (with a lower ceiling than even the Anaheim) with an earthy flavor, and its thick walls provide a meatiness that you don’t often get with chilies.

When dried the poblano is known as ancho, and in this form its arguably more of a Mexican cuisine staple. The earthiness takes a smoky turn, perfect for mole sauces and BBQ. The most widely available dried chiles. Different peppers from the same plant have been reported to vary substantially in heat intensity.

Cascabels
are typically ground into a powder or flakes for culinary use. They have a delicious earthy nuttiness to them that make them a favorite for sauces and marinades. But the flavor is only half the story. These chilies are a very popular ornamental pepper with their apple-like shape, long stem, and rattle. Yes, rattle. Cascabels keep their rounded shape when dried (unusual for chilies) and the seeds become loose in the cavity, creating a rattle like experience.

Pasilla
or “little raisin” refers to the dried chilaca pepper. Sometimes miss labeled as Ancho chiles. The Pasilla chile is normally 8 -10 inches long and much narrower than the Ancho.
Pasillas have a smoky, fruity, earthy flavor that is often compared to berries and dried fruits (like raisins).
Pasilla peppers are similar in flavor to ancho chiles but are less sweet.

Great with fruits, duck, seafood, lamb, mushrooms, garlic, fennel, honey or oregano.

If you like your chilies on the slightly sweeter side, then the guajillo pepper (the dried form of the mirasol chili) is one that should make your shortlist. With hints of tangy cranberry and the crispness of tea, its flavors make the guajillo one of the most popular dried chilies in Mexico, second only to the famous ancho pepper.And like the ancho, the guajillo is one of the holy trinity of chilies that are commonly used in authentic Mexican mole sauces. Its unique sweetness, too, makes it a fun chili to experiment with around the kitchen. It has a surprising range and a heat most everyone can enjoy.

A popular chili for mole sauces, guajillo peppers have a sweet fruitiness to them There’s a little cranberry here and a tea-like undertone. As a dried chili, it’s typically used crushed into flakes or powders, but it can also be rehydrated for use in stews and soups. It takes a close second to the ancho in terms of popularity in Mexican cuisine, though outside of Mexico they can be a little harder to source.

really have a space all their own among chilies. It’s the most popular chili, not only in Mexico but also around the world. There’s a bright bite, perfect for fresh salsas and just spicy enough. The chili has thick walls and enough cavity space to be perfect for stuffing. The jalapeño when dried and smoked becomes the delicious chipotle pepper. Chipotles are known for their deep smokiness, making them delicious in BBQ rubs and marinades.

Morita
is a smoke-dried jalapeno, commonly referred to as a chipolte.
Rich slightly fruity flavor.In Chihuahua, the region of Mexico where most chipotle peppers come from, it is the morita jalapeño, an eggplant-colored pepper, that abounds. Chipotle can also be made from mature red jalapeños. The smoking process takes a few days. Jalapeño peppers are placed on metal grills in smoking chambers or gas dryers, where they are shuffled around every couple of hours to ensure even smoking. Once this process is done, finished chipotle peppers will be shriveled and darkened, and possess the rich flavors of smoke and spice, with a hint of fruitiness.Chipotle is a key ingredient in many traditional Mexican recipes, and is perhaps most famously used in a meat marinade called adobo.

PUYA CHILE
is very similar to the Guajillo, but smaller and hotter.  It may be soaked in water to pull out the flavor. It is often used more for its fruity flavor, rather than its flesh.
Good pureed, mashed or diced, and then made into a sauce. It can be soaked in water to pull out the flavor, and then the water can be used in your dish.The Puya may be used as a pizza topping, or with meat dishes, such as pork, veal, fish and chicken.

Similar bright grassy flavor to Jalapeños , but serrano chilies take the heat factor up to another level. The can double in  heat (and even more), so if you’re ready for a next step pepper, the serrano is an excellent culinary choice. They work very well in salsas. And while serranos are thinner than jalapeños, they still work well for popper recipes.They are meaty peppers and are not the best choice for drying. Serrano peppers originated in the mountainous regions.  Puebla and Hidalgo. The name of the pepper, serrano, actually is a reference to the mountains (sierras) of those areas.

They are commonly red, brown, orange, or yellow, though you are likely to find them in their more common green color.

Serrano peppers are perfect for salsas, sauces, relishes, garnishes, making hot sauce  and more. They are usually best when roasted.

Chile de àrbol
are popular for both culinary uses and as ornamental chilies. Like other dried Mexican peppers, they are typically used for cooking in flake and powder form. They have an earthy flavor, slightly smoky, and they pack a surprising punch. The can reach up to a cayenne pepper level of spiciness. The chilies long and thin shape (and the fact that it keeps its beautiful red color when dried). Not only is this pepper terrific as chili powder or in hot sauces, but it’s also skinny and tiny enough to flavor foods, olive oil, and beverages as a whole dried pod.  The Chile de àrbol adds some serious wow factor in a bottle or as a garnish to a meal or spicy cocktail.

One of the world’s hottest chili pepper, but don’t let the fact that certain chilies have passed it by fool you into underestimating it. The habanero is a seriously hot pepper. And unlike many of the hotter chilies, there’s quite a bit of flavor to go along with the extra-hot kick. it has a unique, citrus-like taste with a subtle hint of smoke that makes it very popular in hot sauces, powders, and rubs. If you can handle the heat, this is a fun culinary chili to play with in the kitchen. Unripe habaneros are green, and they color as they mature. The most common color variants are orange and red, but the fruit may also be white, brown, yellow, green, or purple. Typically habaneros are 1-2 inches /  2–6 centimetres long.-

CAFÉ TACVBA

Café Tacvba is a band from Ciudad Satélite, Mexico.  The band took its final name from a coffee shop "el Café de Tacuba" located in downtown Mexico City. The cafe, which opened in 1912 and had its heyday in the 1940s and 1950s, was representative of the Pachuco scene at the time, something the band would later acknowledge as an influence. The Café de Tacuba is still in operation as a coffee shop and restaurant on Tacuba Street, in Mexico City's Historic Center.

Their musical style covers a wide variety of genres, though it is most commonly labeled as Latin Alternative/Rock en Español. Their music has been heavily influenced by Mexico's indigenous population and folk music traditions, but also by punk and electronic music and other bands on the Mexico City scene. Perhaps the most distinctive feature of their music is Albarrán's nasal voice, which, combined with his impressive lung capacity (as demonstrated on "La Ingrata", a homage of norteño music), makes for a very distinctive sound. They sing entirely in Spanish but have a significant Anglophone following regardless.

And, after a bunch of misinformation about requiring a special $20 Zarpe, good for only 48 hours, every time I want leave the Marina to empty my holding tanks and make water, from the port captain to the Marina... Well, at my request the US Embassy sent me this notice: “con base a la Resolución DGTA Nº. 026-2015 para autorizar el descargue de aguas de lastre en las aguas jurisdiccionales de los puertos de la República de Nicaragua, y si su tanque lastre es de 40 galones, no existe inconveniente en que realice el descargue semanalmente a 5 millas de la costa y comunique de previo a la Capitanía de Puerto de la Fuerza Naval de Corinto”.

As you can read above, if the tank capacity is 40 gallons there is no “inconvenient” to empty the tank weekly at 5 miles from the coast...

So, now my tank is  40 gallons😜😱😎🌈

The most difficult part, other than many mis-charted rocks and reefs, is of course the aptly named Punta Mala and the push north against prevailing winds and current to Marina Vista Mar – we opted to go around Punta Mala at slack tide and quickly had to tuck into Isla Iguana to avoid the following steep chop of rip tide currents and headwinds. Read the anchorage details in Good Nautical for details.

We wait for a coastal low and used the lifting southerly winds for the final 50 nm push (bash) to the Marina Vista Mar - this strategy works between January - May with predominant northerlies.

Another option is to tack out and back to Islas Perlas.

La Quebrada (Spanish for "gulch" or "ravine") is one of the most famous tourist attractions in Acapulco, Mexico. Divers entertain tourists by jumping off either of two ledges on the cliff, one that is 40 feet (12 m) high and the top one which is 80 feet (24 m) high. The divers must calculate the right moment to jump to catch an incoming wave and avoid serious injury or death. Occasionally jumpers dive with a torch. Most of the divers come from the family of Quebrada divers. Although cliff diving at La Quebrada had taken place for many years, it was not until 1934 that the La Quebrada Cliff Divers was formed.

Elvis actually filmed his scenes for the 1963 movie on a Hollywood lot and at a California hotel; Despite singing a song in Spanish, Presley was not exactly “El Rey” in Mexico at the time, as far as officials were concerned. After a newspaper columnist revealed in the late '50s that he had called Mexico “a distasteful country” and was accused of making ugly remarks about Mexican women during an interview, anti-Elvis protestors rose up, and his albums were reportedly burned by protestors. But Elvis' rebellious image also fueled rowdy youth, who caused a “riot” at the premiere of King Creole. And his music was a spark that ignited Mexican rock.

The book "Refried Elvis: The Rise of the Mexican Counterculture"  claims that quote was fabricated. According to author Eric Zolov, "Herbe Pompeyo of Polygram Records in Mexico City claims that a high-up Mexican political figure wanted to contract Presley for a private party, for which he sent the performer a blank check to fill in as he wished.

GALAPAGOS INFO IN GOOD NAUTICAL

HISTORY:

The Galápagos Islands are an archipelago of volcanic islands distributed on the equator in the Pacific Ocean. Located 490 nm due west of continental Ecuador and 800 nm SW from the Panama Canal, the islands are known for their large number of endemic species that were studied by Charles Darwin during the second voyage of HMS Beagle and contributed to the theory of evolution.

The first crude map of the islands was made in 1684 by the buccaneer Ambrose Cowley, who named the individual islands after some of his fellow pirates. These names of the islands were used in the authoritative navigation charts of the islands prepared during the Beagle survey under captain Robert FitzRoy, and in Darwin’s popular book The Voyage of the Beagle.

The Galápagos Archipelago is characterized by numerous contemporaneous volcanoes, some with plume magma sources, others from the asthenosphere, possibly due to the young and thin oceanic crust and group consists of 18 main islands, 3 smaller islands, and 107 rocks and islets.

Although the islands are located on the equator, the Humboldt Current brings cold water to them, causing frequent drizzles during most of the year. The weather is periodically influenced by the El Niño events and are characterized by warm sea surface temperatures, a rise in sea level, greater wave action, and a depletion of nutrients in the water.

 

Galapagos Island Names

SEASONS:

During the season known as the garúa (June to November), the temperature is 22 °C (72 °F) and a steady and cold wind blows from south and southeast, frequent drizzles (garúas) last most of the day, and dense fog conceals the islands. During the warm season (December to May), the average sea and air temperature rises to 25 °C (77 °F) but there is no wind at all and sporadic rains and the sun shines.

Yacht Agents Galapagos Co. Entry Permit for Sailboats

YACHT AGENTS GALAPAGOS Co. ENTRY PERMIT for SAILBOATS

An entry permit called Autografo is required for every vessel with the intention to visit the Galapagos islands, either the protected areas or the inhabited ports only. Yachts arriving with an Autografo in hand are given up to 30 days with the possibility of a 30-day extension.

 

The process to obtain the entry permit normally takes a while (according to the season), therefore we highly suggest you to start the application at least six weeks in advance.

YACHT AGENTS GALAPAGOS Co. GENERAL CLEARANCE PROCESS

In the Galapagos islands is mandatory to use an agent in order to arrange all the clearance in & out process and the coordination before arrival, your agent will represent you during the whole stay.

 

As your agents, we will guide you through the procedures, send you the most useful information to be known regarding the requirements and regulations and will act as a go-between you and the local authorities upon your arrival.

 

When you arrive, several officials will board your vessel at the same time, you will request to fill some forms asking for some information about your crew and the vessel, they will also inspect the boat very thoroughly, looking in the bilges, at your security equipment, navigation equipment, etc.

 

MARINAS

Due to the archipelago is a national park, there are no marinas in the Galapagos islands

Our voyage began with a search of the requirements to enter the islands and we learned we needed to secure an agent. From our first email, Javier was incredibly responsive, knowledgeable, and helpful. He provided us with the regulations and requirements, tips on the islands and pro-forma to clearly explain costs. When we first hired him, he sent to us several documents he had made that explains the rules and regulations in a clear manner. Javier also sent information about each island (i.e.: anchoring, services, attractions). Prior to arrive we notified Javier and his team who then notified the Authorities of our arrival time. Within about two hours of arrival we had all of our inspections completed and we were free to go to shore (this was prior to Covid-19).

During our visit Javier’s team worked with us to obtain fuel which was delivered to our boat on time as promised. We also asked to set up private tours for us on each island with English speaking guides. The tours were tailored to our needs and very informative. Javier is quick to respond to all inquiries and works hard to resolve any questions or issues. He meets each client personally and asks how they can improve their services. We found the islands of Galapagos to be a wonderful, once in a life time adventure that we are so happy we did not pass by. Isla Isabella, Isla Isabel National Park is a national park and protected area located  off the coast of Nayarit .
It was one Jacques Cousteau’s favorite places and that Cousteau himself  made the recommendation to the
Mexican government to designate this island as a National Park.
He spent a great deal of time here and has aired many specials on this fabulous gem.

The park was established in 1980 and is approximately 1.94 square kilometers and offers 2 anchorages to access the park.

Isla Isabel is one of the main nesting islands for seabirds in the Pacific, including large colonies of Magnificent Frigate birds over 11,000 Fregata magnificens , Blue-footed Boobies Sula nebouxii, Brown Boobies Sula leucogaster and Sooty Terns Sterna fuscata. Marine life is rich, with over 24 shark and ray species, three species of sea turtles, the California Sea Lion Zalophus californianus, Humpback Whale Megaptera novaeangliae and Killer Whale Orcinus orca. The island is uninhabited, though there is a seabird reproductive research program run by UNAM and tourists visit to camp, fish and bird watch. After having depleted a huge colony of Sooty Terns, which in 1978 had over 150,000 pairs, cats were finally eradicated from the island in 1995 and the Terns are slowly recovering.

Mambo is a genre of Cuban dance music pioneered by Arcaño y sus Maravillas in the 30s and decades later popularized by Pérez Prado in the big band style. It originated as a syncopated form of the danzón, known as danzón-mambo, Guajeos became the essence of the genre when it was played by big bands which leaned towards swing and jazz. By 1950 mambo had become a "dance craze" in the United States as its associated dance took over the East Coast thanks to Pérez Prado, Tito Puente, Tito Rodríguez and others.

Dámaso Pérez Prado  was a Cuban bandleader, pianist, composer and arranger who popularized the mambo in the 1950s.  His big band adaptation of  "Mambo No. 5" earned him the nickname "King of the Mambo".  In 1955, Prado and his orchestra topped the charts in the US and UK. He frequently made brief appearances in films, primarily of the rumberas genre, and his music was featured in films such as La Dolce Vita.

He moved to Mexico where the developed this particular genre in multiple forms, including bolero-mambo (with María Luisa Landín), guaracha-mambo (with Benny Moré) and two forms of instrumental mambos he created. Prado moved back to Mexico in the 1970s, where he became a naturalized citizen in 1980. His son, Pérez Jr., continues to direct the Pérez Prado Orchestra in Mexico City to this day.

Isla Isabela is so hard to describe, it’s like going to Jurassic Park. This paradise of volcanic origin is inhabited exclusively by birds and iguanas with no fear of predators. It can only be visited by boat and is now a national park. Its an up close and personal adventure with giant Frigates (wing span is up to 7 feet, they are giants) and blue footed boobies!! The Frigates nest in the trees/bushes and the boobies on the ground. Scott was able to land a fish on the way. Not much protection for anchorage so we had 3 restless sleepless nights but so worth it to see this magnificent island. Scott and Nick dove on the anchorage and lots of colorful fish. We will be posting more video/pictures. This is why we do what we do!!

Here is what a typical Papagayo forecast between January and March looks like and below is a report of what can happen - GUST are forecast to 40 knots but they can be 10 knots higher than forecast in the area - one foot on the beach strategy is recommended - the weather seminar video is online under https://panamaposse.com/seminars

PAPAGAYO PASSAGE NOTES 

We left from Pier 32 in San Diego on December 19th. Doing a rather quick transit and hoping to be in Fort Lauderdale by the beginning of April. There are 4 of us. My grandfather, his brother, a friend of ours, and I. We are on a 1972 Bristol B40 that I have owned for just over 2 years now

 Please keep in mind that all of us onboard are quite inexperienced. I learned that similar too Tehuantepec, as most know, and I was aware but thought that we may be ok in the time frame we had; but stay close too shore.

As we had left Chiapas, the app for charts that we use stopped working and so we made the choice to stay further off-shore. This was a bad idea. As we battled the steady 35 knot winds for 2.5 days, we were also being pushed even further offshore and catching the winds at a wider spot than if we would have been closer too shore. Once we finally were within 40 miles of the shore, we were trying to beat right into it as steeply as we could to come as far East as the sails would allow. At the time, we were still too far South as well by about 17 miles. In the process of trying to head upwind our jib began too rip. Our Main had ripped a bit the day before so it was down and we were sailing solely off of our 135% genoa with the motor, unnecessarily but possibly gave us piece of mind, as again we are all not experienced sailors.

The other young man on the crew and I had been switching shifts every 1.5 hours for the past 2.5 days becuase the older gentleman on our crew had become quite seasick and were not coming out of the cabin and were not great helmsmen anyways in the conditions we were in. So, Harry and I fought it out for almost 3 days together. When the jib finally gave out completely, we tried fighting our way through with the motor. We were only making about 2 knots and bobbing around as you can imagine, but headed in the right direction none  the less. We had taken so much water on in the past few days that our cockpit had been full very often of water. At some point the water had leaked into both of the diesel tanks.

 It was too much for the water separator too handle and eventually shut down the motor. Our last option was too try and sail her in on the slightly ripped main alone. As most will know (we didn't) in those conditions, we were basically hove-to with just the main. We had a bit of phone service then but were quickly being blown back out to sea. I was in touch with Ernesto telling him the situation and he had eventually sent the Coast Guard out.

We had called a MAYDAY on the radio while we still had contact and M/Y Maria sent out their 25' jet drive tender too tow us into Flamingo Beach.

 On our way in they asked if we could leave the main up too try and help stabilize the boat. We did so, but when we entered into the bay it began too luff. While it was luffing we read 50 knots on the gauge  Harry and I tried our hardest too pull it down in time but there was no way. It disintegrated into shreds by the time we lowered it and almost took him overboard. Funny enough, during all of this, the person at the helm was hit in the face with a flying fish!! The tender was kind enough too tow us into the beach and made sure we were able too anchor safely in the still high winds that we were facing. Once anchored we spoke with Ernesto and told him that we were aware that Costa Rica makes you check in at a marina but we were not able too get there.

Dan was not happy and I have nothing against him but he was not helpful and told us when i called him too ask for help when we were in a dire situation, and all that he was worried about was if we had been in touch with Ernesto and if our paperwork was already in order on our way in.

His words were "just because you're broken down, does not mean that our countries policies have changed." I explained that we had already done what we needed too and that we were expected too arrive on this day, and that we were also not just "broken down" we were in some pretty big trouble at the time.

After arriving too the beach, Ernesto directed us to get off of the boat and into a hotel for the evening and he was able too send an agent to us to check into Immigration and the Port Captain. Customs was less receptive. Ernesto worked hard to try and get them too come inspect us at the anchorage but they wouldn't. Ernesto also had sent the Coast Guard out too help us in our time of despair. We were able too get a mechanic too look at our boat in Flamingo Beach. His name was Mariscio and his phone number was +50686466628 . He was able too diagnose and get us back and running within the day for around $300. He got us running well enough to get us to our original destination of Marina Papagayo under our own power on a mild day, where customs finally checked us in and gave us our 90 day cruising permit.

Still have not found much in the way of sails here. I am leaning towards having 2nd hand sails shipped too us from Baconsails.com in Annapolis Maryland. This was our experience and if we can help anyone else in any way too avoid what happened too us we will be happy to do that.

Sumidero-Canyon[
is a a deep natural canyon located just north of the city of Chiapa de Corzo in the state of Chiapas, in southern Mexico. The canyon's creation began around the same time as the Grand Canyon in the U.S. state of Arizona, by a crack in the area's crust and subsequent erosion by the Grijalva River, which still runs through it.

Sumidero Canyon

Sumidero Canyon has vertical walls which reach 3,300 ft with the river turning up to 90 degrees during the 13-kilometre (8.1 mi) length of the narrow passage.

The canyon is surrounded by the Sumidero Canyon National Park, a federally protected natural area of Mexico which extends 53.000 acres.

At the north end of the canyon is the Chicoasén Dam opened in 1980
and its artificial reservoir, one of several on the Grijalva River, which is important for water storage and the generation of hydroelectric power in the region.

The dam's power plant, officially named for Manuel Moreno Torres, contains 5 x 300 MW, 3 x 310 MW Francis turbine-generators.

The canyon and national park is the second most important tourist site in Chiapas. The park borders Tuxtla Gutiérrez the regional capital city, which has caused problems with human encroachment and settlement on park land.

depict averages in prevailing winds and currents, air and sea temperatures, wave heights,  visibility, barometric pressure, and weather conditions at different times of the year and is divided into 12 months

The information used to compile these averages was obtained from oceanographic and meteorologic observations over many decades during the late 18th and 19th centuries.

The charts are intended to aid the mariner in selecting the fastest and safest ocean and coastal routes with regards to the expected weather and ocean conditions.
